Scott Hutcheson used his wife's class reunion as inspiration to present a new twist on an old standard - the fruit salad.
Mojito Fruit Salad
1/4 cup fresh lime juice
1/4 cup honey
1/4 cup chopped fresh mint
1 large cantaloupe, halved, seeded, and cut into bite-size pieces
1 quart of strawberries, hulled, halved
1 1/2 cups red seedless grapes
1 cup blueberries
In a small bowl, whisk the lime juice and honey together and add the mint. Allow this to sit for about 15 minutes. Add all the fruit to a bowl and stir in the lime, honey, mint mixture and stir through the fruit. This can be made and refrigerated a few hours a head. This will serve about eight and it can easily be doubled, tripled, etc. to feed a larger group.
Note: Just about any fruit could work well in this recipe. Build this recipe around what is seasonal and available locally and then add other fruits you enjoy.
